Mandarin Muffins with Chocolate Glaze
Ingredients
- Wheat Flour - 2 cups
- Farm fresh eggs - 3 pieces
- Salt - a pinch
- Vanillin - ½ teaspoon
- Meyer Lemon Juice - 1 tablespoon
- Mandarins - 3 pieces
- Activated Baking Soda - ½ teaspoon
- Cocoa Powder - 5 tablespoons
- Sugar - 7.1 oz
- Butter - 2 tablespoons
- Cream 22% - 5 tablespoons
Step by Step guide
Step 1
Cream the butter (should be at room temperature) with sugar, vanillin, and salt. Add the yolk, grated mandarins (zest, pulp, juice). Stir in the flour, mix, and add baking soda, activated with lemon juice. Fold in the beaten egg whites. Mix everything thoroughly. Grease the muffin tin with butter. Pour the batter into the molds to 1/3 full (the batter will rise while baking). Bake for 30 minutes at 356°F.
Step 2
For the glaze, mix cocoa powder and sugar. Add melted butter and hot cream. Place over low heat, stirring constantly, until a smooth mixture is achieved.
Step 3
Drizzle the chocolate glaze over the muffins.
Step 4
Optionally, you can decorate with some sprinkles (I decorated with mandarin slices cooked in syrup).
