Ingredients

  • Wheat Flour - 2 cups
  • Sugar - 1 cup
  • Ground Cinnamon - 2 teaspoons
  • Salt - ½ teaspoon
  • Activated Baking Soda - 2 teaspoons
  • Farm fresh eggs - 3 pieces
  • Vegetable Oil - ¾ cup
  • Lime Juice - 1 tablespoon
  • Mango - 2 cups
  • Beans - 1 piece
  • Chopped almonds - 2.3 oz
  • Raisins - 3.4 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Grease the muffin tin with oil or place paper liners in each cup.

Step 2

In a bowl, mix the flour, sugar, baking soda, cinnamon, and salt.

Step 3

In another bowl, lightly beat the eggs with the vegetable oil and lime juice.

Step 4

Combine both mixtures and mix well.

Step 5

Peel the banana and mash it. Dice the mango into small cubes to make 2 cups.

Step 6

Add the mango, banana puree, raisins, and walnuts to the batter. Mix everything well.

Step 7

Fill the cups two-thirds full with the batter and bake for 20-25 minutes until done, checking with a toothpick.

Step 8

Leave in the pan for 1 minute, then transfer to a plate.
