- Egg white - 10.6 oz
- Sugar - 5.3 oz
- Raspberry Puree - 5.3 oz
- Mandarin Puree - 5.3 oz
- Lychee - 1.1 oz
- Gelatin - 0.4 oz
Step by Step guide
Step 1
Whisk the egg whites and gradually add sugar.
Step 2
Melt the gelatin together with the mango puree.
Step 3
Whip the cream separately and then gently fold in all the ingredients without losing their fluffiness.
Step 4
Pour the resulting mixture into a mold. Garnish with raspberry puree and jelly-like lychee.
