Description

Perfect baking is achieved not only through meticulously measured proportions but also through subtle touches. A well-known pastry chef from a popular baking show shared a special tip for the maple cream pie. The pecans in syrup that she sprinkles on the pie before serving are just as important as all the other steps in the recipe.

Ingredients

  • Coarse flour cookies - 3.7 oz
  • Chopped almonds - 1.1 oz
  • Salted Butter - 6.2 oz
  • Pecan - 4.9 oz
  • Maple syrup - 8 fl oz
  • Whipped Cream - 17 fl oz
  • Egg white - 4 pieces
  • Whole egg - 1 piece
  • Vanilla extract - 0 fl oz
  • Condensed Milk - 1 tablespoon
  • Salt - a pinch
  • Ground Cinnamon - a pinch

Step by Step guide

Step 1

Preheat the oven to 180°C. Melt the butter and mix in the crushed cookies and pecans. Stir well until you achieve a uniform mixture. Grease the baking dish with butter and press the crust mixture into it. Bake for 10 minutes, then set aside to cool.

Step 2

Drizzle the pecans with maple syrup, sprinkle with salt and cinnamon, and mix well. Spread them evenly on a baking sheet lined with parchment paper. Place in the oven for 10 minutes.

Step 3

Reduce the oven temperature to 160°C. In a saucepan, heat the maple syrup and boil for a couple of minutes to enhance its flavor. Remove from heat and add diced butter. Whisk until the butter is melted. Fold in the whipped cream and let the mixture cool for a couple of minutes until it's slightly above room temperature.

Step 4

Add the egg yolks, whole egg, and vanilla, and whisk well. Pour the mixture over the cooled crust. Bake for 40 minutes; the egg mixture should set around the edges while remaining slightly liquid in the center. Allow the pie to cool, then refrigerate for at least 4 hours.

Step 5

Whip the cream vigorously and add the syrup, powdered milk, and vanilla. Spread it over the finished pie and sprinkle with the syrup-soaked pecans. The pie can be served immediately.
