Ingredients
- Ladyfinger Cookies - 5.3 oz
- Ground Almonds - 3.5 oz
- Butter - 2.6 oz
- Liquid dark chocolate - 2.6 oz
- Sugar - 6.2 oz
- Farm fresh eggs - 5 pieces
- Cottage cheese - 21.2 oz
- Vanilla salt - 1.1 oz
- Corn Starch - 1 tablespoon
- Cinnamon - to taste
- Fresh Berries - 7.1 oz
- Citrus Zest Mix - to taste
Step by Step guide
Step 1
Line the bottom of the baking pan with parchment paper.
Step 2
In a food processor, blend the ladyfingers with butter until crumbly. Press into the bottom of the cake pan.
Step 3
Preheat the oven to 302°F.
Step 4
Melt the chocolate in a water bath.
Step 5
Whip the egg whites. Add 25 grams of sugar and whip until stiff peaks form.
Step 6
Mix the cottage cheese with sugar, egg yolks, and vanilla sugar.
Step 7
Gently fold the egg white mixture into the cottage cheese mixture. Set aside a quarter of the mixture in a separate bowl, add the softened chocolate, and mix.
Step 8
Pour the main part of the cottage cheese mixture into the cake pan over the base, smoothing it out. Top with the second part – the chocolate mixture. Use a spoon to lightly swirl both parts together to create a brown-and-white marble pattern.
Step 9
Bake the cake in the oven for about 45 minutes.

Drizzle the finished cake with berry sauce. To make the sauce, combine the berries with sugar and let sit. Once the berries release their juice, transfer to a saucepan and heat. Add cornstarch, cinnamon, and grated lemon zest.
