Marinated melon with lime and basil granita
Ingredients
- Water - 24 fl oz
- Sugar - 4.2 oz
- Fresh basil leaves - 3.2 oz
- Lime Juice - 4 fl oz
- Musk melon - 1 piece
- Watermelon - 1 piece
- Mint Leaves - 0.6 oz
Step by Step guide
Step 1
In a saucepan, bring water with sugar, reserving 1 tablespoon, to a boil, stirring until the sugar dissolves. Boil for about 3 minutes, pour into a bowl, and place on ice. Cool, stirring, for 10 minutes.
Step 2
In a blender, puree the basil leaves, syrup, and 75 ml of lime juice until smooth. Strain through a sieve and squeeze out the remaining liquid. Pour into a container.
Step 3
Place in the freezer for about 2 hours, stirring every 30 minutes, until frozen.
Step 4
An hour before serving, cut the melons into small segments and peel. Transfer to a large bowl. In another bowl, mix the remaining 30 ml of lime juice and 15 g of sugar. Pour the syrup over the fruit and mix well. Let sit for 15 minutes.
Step 5
Stir the granita with a fork, breaking up any clumps.
Step 6
Spoon the melon pieces into dessert cups, drizzle with syrup, top with granita, and garnish with mint leaves.
