Description
This basic recipe can be varied by replacing vanilla extract with any other extract or liqueur.
Ingredients
- Water - 1 cup
- Gelatin - 0.7 oz
- Sugar - 2 cups
- Light Corn Syrup - 0.7 cups
- Salt - ¼ teaspoon
- Vanilla extract - 2 teaspoons
- Potato protein - ½ cup
- Powdered Sugar - ½ cup
Step by Step guide
Step 1
Line a 22x33 cm pan with foil and brush with vegetable oil.
Step 2
Pour 0.5 cup of cold water into a heatproof bowl and sprinkle in the gelatin. Let sit for 15 minutes until the gelatin absorbs all the water.
Step 3
In a saucepan, combine 2 cups of sugar, syrup, salt, and the remaining 0.5 cup of water. Place over low heat and cook, stirring, until the sugar dissolves. Wet the sides of the saucepan with a damp brush. Allow to boil without stirring until the syrup reaches 239°F (240°F), about 8 minutes.
Step 4
Turn on the mixer to low speed and pour the hot syrup into the gelatin. Increase the speed to high and beat until thick and glossy, about 15 minutes. Add the vanilla extract and beat for 30 seconds.
Step 5
Spread the mixture into the prepared pan and smooth it with a damp spatula or hand. Leave at room temperature uncovered for 4 hours.
Step 6
In a small bowl, mix the starch with the powdered sugar. Sift about a third of the mixture onto a work surface. Turn the marshmallow out onto the work surface, carefully remove the foil, and dust the top with the starch and sugar mixture. Cut the marshmallows into pieces of any shape using a sharp knife greased with vegetable oil. Roll in the remaining starch and sugar mixture.
