Description
Marzipan is a very pliable substance, which is why it is used to make decorations and candies of various shapes — fruits, flowers, and different figures.

- Chopped almonds - 5.3 oz
- Bacardi Lemon Rum - 0 fl oz
- Chocolate - 1.1 oz
- Powdered Sugar - 3.5 oz
- Quail Egg - 3 pieces
Step by Step guide
Step 1
First, the almonds need to be blanched to remove the dark outer shell. To do this, pour boiling water over them and let them sit for about a minute. The original recipe suggests adding one bitter almond for every hundred sweet almonds to give a special aroma and flavor. However, I have never seen bitter almonds sold anywhere. They can be replaced with flavorings during the mixing of the almond dough.
Step 2
After a minute, drain the water and pour cold water over the nuts. The dark shell will come off easily from the nut kernel. The peeled almonds should be dried on a paper towel.
Step 3
Grind the peeled and dried almonds in a grinder until they are finely crushed, as fine as your grinder can manage.
Step 4
Thoroughly mix the almond flour with the powdered sugar. It is best to use commercially produced powdered sugar, as homemade ground sugar does not get fine enough.
Step 5
Now add a teaspoon of aromatic alcohol (rum or liqueur) and 3 quail egg whites (which replace the white of one chicken egg and can be eaten raw without worry, unlike chicken eggs). For flavoring, it is not necessary to use alcohol; almond essence or vanilla can be used instead. Water, milk, lemon juice, or another liquid can replace the egg whites. My cookbook mentions some rose water :) Combine all the ingredients to form a smooth almond 'dough'. There should be enough liquid, but not so much that the dough sticks to your hands and the table. You can sprinkle your hands and the table with powdered sugar as needed. If there is not enough liquid in the dough, oil will start to be released from the almonds during mixing.
Step 6
You can come up with a filling for the candies. For example, melt some of your favorite chocolate in a double boiler, let it cool slightly, and mix it with about one-fifth of the almond dough. You can add some coconut flakes or sesame seeds. You can use white chocolate instead of dark chocolate for a creamier filling.
Step 7
From each type of dough, roll a sausage and cut it into 20–30 pieces. Roll the dark pieces into balls. From the light dough, also make a ball, flatten it into a patty, place the filling in the center, and carefully close it with the light marzipan mass, rolling it into a round candy ball. At first, this process may feel unfamiliar and labor-intensive, but soon you'll be making candies like a professional pastry chef :)
