Mascarpone Crème Brûlée with Chocolate

Ingredients

  • Sugar - ¾ cup
  • Mascarpone Cheese Unagrande - 15.9 oz
  • Milk - 8 fl oz
  • Whole egg - 6 pieces
  • Liquid dark chocolate - 2.1 oz

Step by Step guide

Step 1

In a bowl, combine the mascarpone with the yolks and 2/3 of the sugar. Add the milk. Pour the mixture into 4 heatproof ramekins and place them in a larger baking dish. Pour boiling water into the larger dish so that it reaches halfway up the sides of the ramekins.

Step 2

Bake at 356°F (350 degrees Fahrenheit) for 30–35 minutes, until the edges are set but the center remains slightly liquid. Allow to cool to room temperature, then refrigerate until fully chilled.

Step 3

Melt the chocolate and spread it over the surface of the cream. Refrigerate for at least 15 minutes until the chocolate sets. Sprinkle the remaining sugar on top and caramelize using a kitchen torch. Serve.
