  • Glutinous Rice Flour - 2.8 oz
  • Baking Powder - a pinch
  • Matcha - 0.4 oz
  • Drinking Yogurt - 2 fl oz
  • Coconut Milk - 0 fl oz
  • Muscovado Sugar - 3 spoons
  • Avocado - 1 piece
  • Olive Oil - 0 fl oz
  • Apple Cider Vinegar - 0 fl oz
  • Lightly Salted Red Fish - 2.1 oz
  • Black sesame seeds - to taste
  • Salt - to taste

Step by Step guide

Step 1

Whisk the eggs until pale, then add the rice flour with baking powder and mix well. Incorporate the matcha, yogurt, coconut oil, a pinch of salt, and sugar. Let it sit for 15 minutes.

Step 2

Cook the waffles in a waffle maker for 5–7 minutes, depending on the appliance.

Step 3

Mash the avocado with a fork, adding olive oil and apple cider vinegar, and season with salt to taste.

Step 4

Place avocado quenelles on the waffles, add salmon, and sprinkle with sesame seeds and sea salt.
