Matzah Snack with Red Peppers and Onions

Ingredients

  • Matzah - 6 pieces
  • Chicken Egg - 6 pieces
  • Salt - ½ teaspoon
  • Ground Black Pepper - ¼ teaspoon
  • Dill - 1½ tablespoons
  • Onion - 2 heads
  • Orange Bell Peppers - 2 pieces
  • Olive Oil - 2 fl oz

Step by Step guide

Step 1

Break the matzah into small pieces and place it in a sieve. Rinse under hot water until the matzah becomes soft, about 1-2 minutes. Let it sit for 5 minutes.

Step 2

In a bowl, lightly beat the eggs with salt, pepper, and 1 tablespoon of dill. Add the matzah and mix well.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the sliced onions and thinly sliced peppers. Sauté for 8-10 minutes until golden brown. Add the egg mixture and cook for about 15 minutes, stirring until the matzah is browned. Season with salt and pepper and sprinkle with the remaining dill.
