Description
You can substitute champignon mushrooms with seasonal mushrooms, but remember that some mushrooms need to be pre-boiled.

- Dry yeast - 0.4 oz
- Sugar - 2.1 oz
- Butter - 1.8 oz
- Chicken Egg - 2 pieces
- Wheat Flour - 16.9 oz
- Beef - 10.6 oz
- Onion - 2 heads
- Champignons - 10.6 oz
- Buckwheat Groats - 3.5 oz
- Vegetable Oil - 3 fl oz
- Pancakes - 8 pieces
- Ghee - 2.5 oz
- Salt - to taste
Step by Step guide
Step 1
Mix warm milk with sugar and yeast, and let it sit for 10 minutes. Then add one egg, softened butter, and 3 grams of salt, stir to combine, and gradually add flour.
Step 2
Knead a flexible dough, place it in a greased bowl, cover with a towel, and let it rest in a warm place for one hour.
Step 3
For the meat filling, cut the meat into small pieces and boil for one hour.
Step 4
For the mushroom filling, dice the onion and mushrooms into equal-sized cubes.
Step 5
Sauté the onions in vegetable oil in a skillet, then add the mushrooms and cook for 10 minutes, stirring occasionally. Season with salt to taste and let cool.
Step 6
Cook the buckwheat until tender, which will take 15 to 20 minutes.
Step 7
Pass the boiled meat through a meat grinder. In a skillet, heat some vegetable oil and sauté one finely chopped onion until translucent, then add the minced meat and a little broth from the cooked meat, seasoning with salt to taste. Simmer for 10-15 minutes, then remove from heat and let it cool.
Step 8
Punch down the risen dough and set aside a small piece for decoration. Roll out the larger portion of the dough on a lightly floured surface. Place two pancakes in the center of the rolled dough and brush them with melted butter.
Step 9
Spread the meat filling on top. Cover it with two pancakes, brush them with butter, and layer the mushroom filling on top. Again, cover the filling with pancakes, brush them with butter, add the buckwheat, and cover it with pancakes, brushing them with butter. Seal the kulebyaka by joining the loose edges of the dough.
Step 10
Turn the kulebyaka onto the baking sheet seam side down, brush it with egg, and create decorations from the reserved dough. These can be simple crossed strips or roses with leaves; also brush the decorations with egg. Make several holes in the kulebyaka using a skewer.
Step 11
Place in the oven preheated to 356°F for 35–40 minutes.
