Description
The term 'fyjdzhyn' refers to an Ossetian pie filled with chopped meat. A pumpkin pie is called 'nasdzhyn', while 'baldzhyn' is a cherry pie. In Ossetia, pies hold a ritual significance, but nowadays they are enjoyed simply because they are loved. Once prepared, the fyjdzhyns should be stacked on top of each other and sliced like a cake.
Ingredients
- Wheat Flour - 20 oz
- Milk - 5 fl oz
- Dry yeast - 0 oz
- Kefir - 5 fl oz
- Chicken Egg - 1 piece
- Sugar - 0 oz
- Beef - 0 lbs
- Onion - 1 head
- Red Long Chili Peppers - to taste
- Garlic - 3 cloves
- Chicken Broth - to taste
- Ghee - 5 oz
- Sour Cream - 0 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Mix the warm milk with sugar and yeast until the yeast is completely dissolved. Let it sit for 10-15 minutes to allow the mixture to rise.
Step 3
Add kefir, sour cream, an egg, and a pinch of salt to the risen dough mixture. Mix well, then gradually add flour and knead the dough. Cover the prepared dough with plastic wrap or a towel and place it in a warm spot for 1 to 1.5 hours.
Step 4
Pass the meat, onion, and garlic through a meat grinder, season the minced meat with salt, black pepper, and red pepper, and add a little beef broth.
Step 5
Cover the filling with plastic wrap and refrigerate for 1 hour.
Step 6
Divide the rested dough into three equal parts. On a floured surface, flatten one part of the dough into a thick round disc. Place a third of the filling in the center of the disc, gather the edges of the dough towards the center, and pinch them together to encase the meat filling inside the resulting round dough ball.
Step 7
Transfer the flatbread to a floured board and begin to gently flatten it, moving from the center to the edges. Cover the flatbread with a second identical board, flip it over, and continue flattening from the center to the edges, trying to achieve a perfect round shape and thin dough. You can flip the flatbread several times in this manner. The pie should have a diameter of at least 30 cm.
Step 8
Make several cuts on the surface of the pie, creating a pattern while being careful not to cut through the bottom layer of the dough. Also, prepare the other two pies.
Step 9
Preheat the oven to 445°F (450 degrees Fahrenheit) and place a baking tray inside to heat it up. Dust the hot tray with flour or line it with parchment paper, then place the pie on it and send it to the oven for 18–20 minutes.
Step 10
Generously brush the finished pies with melted butter and stack them on top of each other. You should cut all three at once, as if this stack of pies were a cake.
