Medieval Pear Pie
Ingredients
- Dry White Wine - 24 fl oz
- Sugar - 9.2 oz
- Cinnamon - 1 stick
- Pears - 3 lbs
- Rose water - 0 fl oz
- Waffle cakes - 2 pieces
- Butter - 0.2 oz
Step by Step guide
Step 1
Preheat the oven to 205°C (400°F).
Step 2
Combine the wine and 200 g of sugar in a large heavy saucepan over medium heat.
Step 3
Stir until the sugar dissolves.
Step 4
Add the cinnamon and cloves.
Step 5
Peel the pears, cut them in half lengthwise (from top to bottom), and remove the cores.
Step 6
Add the pears to the wine mixture and cook for 5-7 minutes or until the pears are tender.
Step 7
Remove the pears from the syrup.
Step 8
Increase the heat and bring the syrup to a boil.
Step 9
Place the bottom cake layer in the bottom of the pan.
Step 10
Arrange the sliced pears on top.
Step 11
Sprinkle the pears with 50 g of sugar.
Step 12
Remove the spices from the wine syrup.
Step 13
Add 1 tablespoon of rose water to the pink syrup and mix well.
Step 14
Take 80 ml of the wine syrup and drizzle it over the pears.
Step 15
Cover the pie with the top cake layer, seal the edges by pressing the top and bottom cake layers together around the perimeter.
Step 16
Cut a hole in the center of the pie and place it on a rack in the center of the oven.
Step 17
Bake for 20 minutes, then remove from the oven.
Step 18
Melt 15 g of butter and 7.5 ml of rose water. Brush the mixture over the top of the pie.
Step 19
Sprinkle with 15 g of sugar and return to the oven.
Step 20
Bake for another 20 minutes or until golden brown.
