Ingredients
- Sour Cream - 2 lbs
- Egg white - 2 pieces
- Sugar - 3 cups
- Activated Baking Soda - 1½ teaspoons
- Wheat Flour - 2 cups
- Cocoa Powder - 3½ tablespoons
- Meyer Lemon Juice - 0 fl oz
- Butter - 2 tablespoons
Step by Step guide
Step 1
For the sponge cake: Mix 2 cups of sour cream (400 g), 2 eggs, 2 cups of sugar, 1.5 teaspoons of baking soda, and 2 cups of flour. Divide the batter into 2 parts, adding 2 tablespoons of cocoa to one part. Bake at 392°F for about 20–25 minutes. Optionally, you can add berries or walnuts to the batter.
Step 2
For the cream: Whip together 600 g of sour cream, 1 cup of sugar (preferably superfine), and the juice of half a lemon.
Step 3
For the glaze: Melt 2 tablespoons of sour cream, 1.5 tablespoons of cocoa, 2 tablespoons of butter, and 2 tablespoons of sugar over low heat without boiling.
Step 4
Layer the cooled sponge cakes with cream and cover with chocolate glaze.
