Ingredients
- Sugar - 7.1 oz
- Egg white - 3 pieces
- Cream - 8 fl oz
- Meyer Lemon Juice - ½ teaspoon
- Vanilla salt - 1 tablespoon
- Strawberry - 14.1 oz
Step by Step guide
Step 1
Preheat the oven to 212°F.
Step 2
Separate the egg whites from the yolks and whip with 150 grams of sugar until a thick foam forms. Add lemon juice, the remaining sugar, and whip again.
Step 3
Line a baking sheet with parchment paper and pipe meringues about 7 cm in diameter using a pastry bag. Bake for about 2 hours.
Step 4
Whip the cream with 1 tablespoon of vanilla sugar and add strawberries cut into small pieces. Spread the mixture over the finished pastries.
