Ingredients
- Salt - a pinch
- Egg white - 2 pieces
- Sugar - 8.8 oz
- 33% Cream - 1 fl oz
- Mascarpone Cheese Unagrande - 5.3 oz
- Fresh Berries - to taste
Step by Step guide
Step 1
For the meringue, whip 2 egg whites with a pinch of salt until foamy, gradually adding 150 grams of sugar. Whip until thick. Transfer the mixture to a pastry bag and pipe small rounds with edges on a baking sheet. Dry in a preheated oven at 212°F for 1 hour.
Step 2
For the cream, whip 50 ml of 33% cream with 100 grams of sugar and 150 grams of mascarpone cheese.
Step 3
Allow the finished meringue to cool. Fill with cream and decorate with berries and mint leaves.
