Ingredients
- Sugar - 10.6 oz
- Egg white - 4 pieces
- Meyer Lemon Juice - 0 fl oz
- Red Food Coloring - to taste
- Powdered Sugar - 2.1 oz
Step by Step guide
Step 1
Place three egg whites in a dry bowl and beat with a mixer until a stable white foam forms.
Step 2
While continuing to beat, add 1 teaspoon of lemon juice and gradually sprinkle in the sugar until it is all incorporated. The result should be a thick white mass.
Step 3
Line a baking sheet with parchment paper and use a tablespoon to drop the egg white mixture into small circles. Bake for 1.5 hours at 212°F.
Step 4
For the glaze, whisk the remaining egg white and gradually add the powdered sugar, then add 0.5 teaspoon of lemon juice. The whipped mixture should be thick and not runny. Divide it into two parts, adding food coloring to one part.
Step 5
Cover the meringues with blue glaze, and use the white glaze to create snowflakes.
