Meringues with Lemon Sauce

Ingredients

  • Sugar - 8.8 oz
  • Egg white - 2 pieces
  • Lemon - 3 pieces
  • Butter - 4.2 oz
  • Egg white - 2 pieces

Step by Step guide

Step 1

Preheat the oven to 203°F. Grease a large baking sheet lined with parchment paper and lightly dust with flour, shaking off the excess.

Step 2

In a bowl, beat the egg whites with a mixer until stiff peaks form. Gradually add 100 g of sugar and beat well again. Spoon 1 teaspoon of the whipped egg whites for each meringue, spaced apart, and place in the oven for 45 minutes. Turn off the oven and leave the tray inside for another hour.

Step 3

Using a metal spatula, transfer the meringues to a plate and let cool.

Step 4

Grate 2 teaspoons of lemon zest from the lemons and squeeze out 120 ml of juice. In a metal bowl, combine the juice, zest, remaining sugar, and eggs. Cut the butter into pieces and add to the bowl. Place over a water bath and whisk until thickened, about 20 minutes. Serve warm or chill.

Step 5

Serve the meringues with the sauce.
