Mexican Anise Cookies
Ingredients
- Margarine - 2½ cups
- Sugar - 1 cup
- Star anise - 2 teaspoons
- Orange juice concentrate - 1 fl oz
- Farm fresh eggs - 2 pieces
- Wheat Flour - 6 cups
- Baking Powder - 1 tablespoon
- Cream of tartar - ½ teaspoon
- Salt - to taste
Step by Step guide
Step 1
Beat the melted cooled margarine with sugar and anise until creamy. Add the eggs one at a time, beating constantly. Then pour in the orange juice and continue to beat.
Step 2
Mix the flour with the baking powder, cream of tartar, and salt. Gradually incorporate this mixture into the prepared batter and knead the dough.
Step 3
On a lightly floured surface, knead the dough, shape it into a log, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes.
Step 4
Preheat the oven to 175°C (350°F). Divide the log of dough in half and roll one half on a lightly floured surface to a thickness of 1.5 cm. Use a cookie cutter to cut out cookies. Repeat the same with the remaining dough.
Step 5
Bake the cookies on a baking sheet lined with parchment paper for 5-8 minutes.
