Milanese Tiramisu
Ingredients
- Wheat Flour - 0.9 oz
- Almond - 3.5 oz
- Raw cane sugar - 2.8 oz
- Instant coffee - 0.7 oz
- Mascarpone Cheese Unagrande - 17.6 oz
- Sugar - 3.5 oz
- Chocolate eggs - 6 pieces
- Ground Coffee - 7.1 oz
- Amaretto Liqueur - 1 fl oz
- Dark rum - 0 fl oz
- Gingerbread-flavored syrup - 1 fl oz
- Cocoa Powder - 0.7 oz
- Nuts - 1.1 oz
- Chocolate - 1.1 oz
Step by Step guide
Step 1
For the biscuit, mix all the flour, beat the yolks with cane sugar and coffee. Whip the egg whites separately and combine with the yolks and flour. Pour into a mold and bake in the oven at 320°F for 15 minutes. Allow to cool and cut into two equal parts.
Step 2
For the mousse, beat the yolks and mix with the cheese. Whip the egg whites with sugar separately. Combine both mixtures with a wooden spoon.
Step 3
For the soaking syrup, mix ground espresso coffee, liqueur, rum, and sugar syrup (15 grams of sugar in a 1:1 ratio with water, mix and bring to a boil).
Step 4
Brush the finished biscuit with the soaking syrup. Layer with mousse and place the second half of the biscuit on top. Soak the second half with mousse. Allow to rest for at least 1 hour in the refrigerator.
Step 5
Before serving, sprinkle with cocoa. Optionally, you can decorate with chocolate and nuts. Cut and serve.
