Ingredients
- Large eggs - 2 pieces
- Shrimp - 7 pieces
- Oregano - to taste
- Feta cheese - 0.7 oz
- Capers - 1 tablespoon
- Fresh basil leaves - 1 bunch
- Marinated cherries - 4 pieces
- Olive Oil - to taste
- Parsley - to taste
- Ground Black Pepper - to taste
- Butter - to taste
Step by Step guide
Step 1
Peel the shrimp, making sure to remove the digestive tract.
Step 2
Sauté the shrimp on both sides in butter and olive oil until cooked. Be careful not to overcook them, or they will become rubbery. The cooking time for shrimp depends on their size and the power of the stove.
Step 3
Sprinkle with oregano and pour in the pre-beaten eggs. Do not salt the omelette. If desired, you can just add pepper.
Step 4
Place a handful of spinach on the omelette, crumble the feta by hand, sprinkle with capers, and when the omelette is no longer liquid, use a silicone spatula to fold it over from one side and cook for another minute on low heat.
Step 5
Optionally, sprinkle with parsley and arrange the sliced cherry tomatoes on top.
