Ingredients

  • Pumpkin - 17.6 oz
  • Millet - 8.8 oz
  • Milk - 17 fl oz
  • Water - 8 fl oz
  • Butter - 0.5 oz
  • Salt - 1 tablespoon
  • Ground Cinnamon - ½ spoons
  • Sugar - 2 spoons

Step by Step guide

Step 1

Peel the pumpkin and cut it into small cubes.

Step 2

Melt the butter over high heat. You can use a large pot right away — the one in which you will cook the porridge.

Step 3

When the butter has melted and starts to sizzle, add the pumpkin, a quarter teaspoon of salt, all the cinnamon, and 2 tablespoons of sugar. Sauté for 5–7 minutes until a distinct aroma of pumpkin and caramel emerges.

Step 4

Add all the prepared milk to the sautéed pumpkin, reduce the heat, and simmer the pumpkin covered for 15–20 minutes.

Step 5

Thoroughly rinse the millet first with cold water and then with hot water until the rinsing water runs clear. This is necessary to wash away any possible impurities and the floury residue from the grains, ensuring that the cooked porridge does not taste bitter.

Step 6

Add millet to the pumpkin, along with the remaining salt and a cup of water. Stir, cover with a lid, and cook for another 40-45 minutes. Occasionally lift the lid and stir the porridge. If all the liquid is absorbed earlier and the millet seems insufficiently soft, add a little more hot water.

Step 7

You can add more butter and sugar (or honey) to the cooked porridge to taste. This porridge, made using this recipe, is especially delicious when enjoyed with walnuts and raisins.
