Description

For a vegan version, use water instead of milk and omit the butter. It will still turn out great. A spoonful of honey or good apricot jam would complement this porridge wonderfully, but it’s also excellent without them. For a touch of intrigue, place an almond kernel at the bottom of the bowl or on top as a garnish.

Ingredients

  • Millet - 3.5 oz
  • Pumpkin - 5.3 oz
  • Dried Apricots - 5 pieces
  • Salt - a pinch
  • Butter - 1 teaspoon
  • Skim Milk - 7 fl oz
  • Apricot Jam - to taste

Step by Step guide

Step 1

Peel the pumpkin from the skin and seeds, cut it into small cubes, and place it in a saucepan or pot where you will cook the porridge. Add salt and, if not fasting, add a spoonful of butter. Pour water over the pumpkin so that the vegetable cubes are covered, and place the pot over medium-high heat. The essence of this method is that the pumpkin will be fully cooked when the water evaporates. The flavor will be richer than if you boiled the pumpkin and drained the water. While the pumpkin is cooking, prepare the base of the porridge.

Step 2

Pour the millet into a bowl and sift out any unhulled grains and impurities. Then, scald the grains with boiling water, drain, and rinse the millet in several cold waters, rubbing the grains with your fingers.

Step 3

By this time, the pumpkin should be ready. Check it with a fork. Directly on top of the pumpkin, place the millet, add a little more salt, and pour in water or milk. For the semi-thick porridge we are trying to achieve here, you will need 2 parts of liquid for every part of millet + moisture from the pumpkin.

Step 4

Set the heat to low and let the porridge cook for about 15–20 minutes. In the meantime, rinse the dried apricots and chop each into 6–8 pieces.

Step 5

When the porridge is cooked, add the dried apricots and gently mix, for example, with a fork, being careful not to crush the grains. By this time, the pumpkin will have started to break down into strands and will be evenly distributed throughout the porridge. Remove the porridge with pumpkin and dried apricots from the heat and let it sit for about 5 minutes to warm the dried apricots. Serve.
