Millionaire's Christmas Cake
Ingredients
- Pitted Wild Apricots - 5.3 oz
- Green Figs - 6.7 oz
- Dried Apricots - 5.3 oz
- Pitted olives - 6.7 oz
- Candied fruits - 5.3 oz
- Margarine - 7.1 oz
- Wheat Flour - 2 cups
- Candied Lemon Peel - 3.9 oz
- Baking Powder - 2 teaspoons
- Vanilla salt - 1 teaspoon
- Salt - 1 teaspoon
- Apricot Jam - 2.8 oz
- Walnuts - 9.2 oz
- Sugar - 1 cup
- Chocolate eggs - 5 pieces
Step by Step guide
Step 1
In a bowl, mix the first 8 ingredients, finely chopping them.
Step 2
Cream the margarine with sugar. Beat until fluffy. Add flour, baking powder, salt, vanilla, and eggs. Mix well. Gradually pour the batter into the fruit mixture while stirring. Preheat the oven to 320°F. Grease a high-sided baking pan with oil. Pour the batter into the pan.
Step 3
Bake the cake for one and a half hours. Check for doneness with a wooden stick. Let it cool.
Step 4
Remove from the pan. Decorate the cake: warm the apricot jam and brush it over the cake. Sprinkle with dried fruits, candied fruits, and nuts. Pour the remaining jam on top for a glossy, festive finish.
Step 5
Decorate with a beautiful ribbon around the cake. Be sure to tie it with a fancy bow.
