Ingredients
- Sugar - 5.3 oz
- Chicken Egg - 1 piece
- Wheat Flour - 7.1 oz
- Kefir - 10 fl oz
- Butter - 3.5 oz
- Baking Powder - 2 teaspoons
- Dried Apricots - 3.5 oz
- Cocoa Powder - 4 tablespoons
- Semi-soft cream cheese - 2 tablespoons
- Vanilla salt - ½ cup
Step by Step guide
Step 1
Chop the dried apricots with sugar and cottage cheese in a blender until a paste-like consistency is achieved.
Step 2
Beat the egg with sugar until it doubles in volume. Gently pour in the melted butter.
Step 3
Mix the flour, baking powder, cocoa, and a pinch of salt. While continuing to beat, gradually add part of the flour mixture. Pour in part of the kefir. Alternately adding kefir and flour, knead the dough.
Step 4
Grease the mold with butter. Place a tablespoon of dough into each cavity. Add a teaspoon of the cottage cheese mixture in the center of each. Pour the remaining dough over the top.
Step 5
Bake in a preheated oven at 356°F for about 25–30 minutes. Check for doneness by inserting a toothpick or match into the muffin.
Step 6
Remove from the mold and cool on a clean towel, covering with another towel on top. Optionally, top with chocolate glaze or sprinkle with powdered sugar.
