Mini Chocolate Mint Truffle Cookies
Ingredients
- Butter - 2.1 oz
- Mini Chocolate Chips - 6 oz
- Egg white - 1 piece
- Sugar - 2.6 oz
- Brown Sugar - 2.6 oz
- Vanilla extract - ½ teaspoon
- Wheat Flour - 1 cup
- Cocoa Powder - 2.6 oz
- Baking Powder - ¼ teaspoon
- Mint Leaves - 0.5 teaspoon
- Salt - 0.5 teaspoon
- Margarine - 2 teaspoons
- Mint-Filled Chocolate Candies - 4.6 oz
- Mini Chocolate Chips - 1.8 oz
- Pastry decorations - to taste
Step by Step guide
Step 1
In a bowl, melt the butter with half of the chocolate chips (dark) in the microwave or over a water bath until smooth. Let it cool slightly. Stir in the egg, sugar, and vanilla extract. In another bowl, mix the flour, cocoa powder, baking powder, and salt. Gradually add the chocolate mixture to the dry ingredients, stirring. Crush the candies and add ¾ of the cup to the dough.
Step 2
Roll the dough into small balls and place them on a clean baking sheet, spaced 5 cm apart.
Step 3
Bake at 356°F for 8–10 minutes, until the tops of the balls are slightly dry. Cool for a minute and transfer to a wire rack.
Step 4
In the microwave, melt 1 tablespoon of margarine with the remaining chocolate chips (dark). Add the remaining crushed candies and mix.
Step 5
In another bowl, melt the remaining margarine with the white chocolate chips.
Step 6
Dip half of the truffles in dark chocolate and the other half in white chocolate. Place on parchment paper, sprinkle with decorations, and let set for a while.
