Description

French classics are always in style. A classic tart in a mini version.

Ingredients

  • Wheat Flour - 8.8 oz
  • Butter - 4.4 oz
  • Whole egg - 2 pieces
  • Water - 1 fl oz
  • Salt - a pinch
  • Sugar - a pinch
  • Pears - 2 pieces
  • Chocolate - 7.1 oz
  • Chocolate eggs - 3 pieces
  • Cream 22% - 4.2 oz
  • Milk - 4 fl oz

Step by Step guide

Step 1

First, we need to make the shortcrust pastry.

Step 2

Sift the flour and add the butter. Rub the butter and flour together with your hands until homogeneous. Add 2 egg yolks and 50 ml of cold water, along with a pinch of salt and sugar. Knead the dough. You may need to add another pinch of flour. The dough should not stick to your hands and should be soft and uniform. If everything is ready, wrap it in plastic wrap and place it in the refrigerator for 20-30 minutes.

Step 3

While our dough is chilling, we will prepare the filling. Peel 2 medium-sized pears and remove the core, which we won't need. You can slice the pear as you wish, just make sure it fits into the baking dish.

Step 4

Now we need to make the egg-milk mixture. In a saucepan, whisk together 3 chicken eggs, milk, and cream, adding a pinch of salt and sugar.

Step 5

Let's prepare the ganache. This is a very simple French cream. In a double boiler, melt the dark chocolate with butter, cream, and a couple of pinches of sugar.

Step 6

When everything is ready, take the dough out of the refrigerator, roll it out thinly, and cut it to fit your baking molds. Grease the molds with butter beforehand. Place the dough in the molds, add the pears, and pour in the egg-milk mixture, but not completely.

Step 7

Place in the oven for 20-25 minutes at 160°C.

Step 8

After you take the desserts out of the oven, let them cool for 10 minutes and pour melted chocolate over them. Place in the refrigerator until the chocolate sets.
