Mint chocolate chip ice cream

Ingredients

  • 3.2% Milk - 7 fl oz
  • Cream 22% - 12.3 oz
  • Whole egg - 4 pieces
  • Sugar - 5.6 oz
  • Fresh Mint - 1.9 oz
  • Chocolate shavings - 0.9 oz
  • Red Food Coloring - to taste

Step by Step guide

Step 1

Wash the mint and separate the leaves from the stems. Soak the leaves in cold water for 5 minutes.

Step 2

In a saucepan, combine the milk, cream, and mint. Place over medium heat and warm until the milk mixture is just about to boil.

Step 3

In a large bowl, whisk the egg yolks while gradually adding the sugar. Continue whisking until the mixture turns a pale yellow color and achieves a soft, creamy texture.

Step 4

As soon as the milk mixture comes to a boil, remove it from the heat. Gradually pour the hot milk mixture into the egg mixture, stirring constantly. While stirring, keep the whisk vertical; otherwise, bubbles will form on the surface of the future ice cream.

Step 5

Pour the resulting mixture back into the saucepan, place it over medium heat, and stir using a wooden spoon until the mixture thickens. While stirring, make sure to scrape the edges and the middle of the bottom of the saucepan to prevent the mixture from burning. Do not let it boil. The cream is ready when it reaches the consistency of liquid sour cream. Remove the cream from the heat.

Step 6

Strain the cream through a sieve to remove the mint leaves. If the cream is too thick for your sieve, strain it gradually, pushing the cream through with a tablespoon. Strain into a clean saucepan.

Step 7

Place the strained cream over a cold water bath. To do this, fill a large bowl halfway with very cold water and ice cubes. Set a saucepan with the cream on top. Stir the cream occasionally for 30–40 minutes, until it cools down. This stirring will prevent the ice cream from crystallizing.

Step 8

Remove the ice cream pot from the water bath, add 2 drops of food coloring, and mix well. Tightly cover the pot with a lid and place it in the refrigerator for 4–5 hours to chill further.

Step 9

After the time has passed, take the ice cream out of the refrigerator and pour it into the ice cream maker. Churn for 20–40 minutes. During the last minute of churning, add the chocolate chips. Once done, fill a container with the mixture and place it in the freezer for 3–4 hours until fully set.

Step 10

If you don't have an ice cream maker, immediately transfer the frozen mixture to a container, add chocolate chips, stir, and place it in the freezer. Take the container out and stir the contents every half hour until it is fully set.
