Ingredients
- Butter - 2.5 oz
- Brown Sugar - 2.5 oz
- Wheat Flour - 2.8 oz
- Egg white - 1 piece
- Cocoa Powder - 1 tablespoon
- Liquid dark chocolate - 1.8 oz
- Water - 1 tablespoon
- Mint Leaves - ¼ teaspoon
- Powdered Sugar - 2.8 oz
- Fresh Mint - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F. Line a muffin tin with paper liners.
Step 2
Melt 20 grams of chocolate (for example, in the microwave on medium power for about 3 minutes, stirring). In the meantime, allow the butter to reach room temperature.
Step 3
Using a mixer, beat the butter with the egg until fluffy. Then add the cocoa and flour with baking powder, pour in the chocolate and mint extract (or flavoring). Beat again until a uniform mixture is obtained.
Step 4
Chop the remaining chocolate into small cubes, add to the batter, and mix.
Step 5
Evenly distribute the batter among the liners, filling each about ¾ full.
Step 6
Bake for 15 minutes. Once they rise and are cooked through, transfer to a wire rack and let cool completely.
Step 7
In a separate bowl, prepare the frosting: mix the powdered sugar with water, adding a couple of drops of mint extract, until a thick (not runny) uniform mixture is formed.
Step 8
Once the cupcakes have cooled, use a teaspoon to spread frosting on top. Before it sets, decorate the cupcakes with mint leaves.
