Description
Instead of mint, you can use a bit of brandy, liqueur, zest, or fresh chili if desired.
Ingredients
- Cream 22% - 17 fl oz
- Mint - 1 bunch
- 70% Dark Chocolate - 17.6 oz
- Butter - 4.6 oz
- Honey - 4.6 oz
Step by Step guide
Step 1
Pour the cream into a small saucepan. Add the mint leaves, which should be crushed beforehand with a wooden spoon or the blunt side of a knife. Heat the cream with the mint over low heat for about 5–6 minutes.
Step 2
Meanwhile, chop the chocolate in a large bowl, add the butter and honey. Pour the hot cream through a sieve into the chocolate to remove the mint leaves. Gently stir until the chocolate is completely melted and the mixture is smooth.
Step 3
Pour the resulting mixture into a wide flat dish, cover with a lid, and place in the refrigerator for about an hour. In the meantime, pour your chosen coating for the truffles onto a flat plate, such as grated chocolate, shredded coconut, ground nuts, or cocoa.
Step 4
Remove the chilled mixture from the refrigerator, scoop it with a teaspoon, and form small balls with your hands. Then roll them in the coating of your choice and place them on a plate.
