- Butter - 2.8 oz
- Sugar - 2.8 oz
- Wheat Flour - 5.6 oz
- Fresh Mint - 0.7 oz
- Egg white - 1 piece
Step by Step guide
Step 1
In a food processor, combine the mint leaves and sugar — after a minute, you will have mint sugar.
Step 2
Mix with softened butter until smooth.
Step 3
Add the flour. Stir until you get nice clumps. Crack in the egg. Continue mixing until a dough forms.
Step 4
Take small pieces of dough, roll them into balls in your palms, and flatten them with your fingers. Place them on a baking sheet lined with parchment paper. The cookies will rise slightly but won't spread, so you can place them confidently a little apart.
Step 5
Bake for 20–22 minutes at 347°F until golden brown.
Step 6
Store the cooled cookies in an airtight container; otherwise, they will dry out quickly.
