Mint Gingerbread Tree
Ingredients
- Wheat Flour - 7.1 oz
- Raw cane sugar - 2.1 oz
- Butter - 3.5 oz
- Honey - 2 tablespoons
- Vanilla Pod - 1 piece
- Grated Ginger Root - ¾ teaspoon
- Salt - a pinch
- Ground clove - 2 pieces
- Activated Baking Soda - ½ teaspoon
- Fresh Mint - 0.4 oz
- Chocolate eggs - 2 pieces
Step by Step guide
Step 1
In a bowl, melt the butter, add honey, 2/3 of the sugar, and stir while keeping it on the heat until all the sugar dissolves. Let the mixture cool slightly and then add the yolks from 2 eggs.
Step 2
In another bowl, mix the dry ingredients with the spices and sift several times. Then combine everything with the butter mixture and gently knead the dough, which should be refrigerated for half an hour, or even better — for an hour.
Step 3
While the dough is resting, prepare the mint glaze. Whip the chilled egg whites into a stiff foam, adding lemon juice or a pinch of salt. For flavor and color, add blended fresh mint and the remaining sugar (you can use mint extract and a drop of green food coloring).
Step 4
Roll out the dough to a thickness of 0.5–0.7 mm and cut out star shapes of different diameters using cookie cutters. Bake for about 7–10 minutes, keeping an eye on the oven. Cool the baked cookies on a wire rack.
Step 5
Assemble the tree! Decorate the finished cookies with mint glaze and sprinkles, then starting from the largest, thread them onto a wooden skewer with the pointed end up. You can place a star made of colored marzipan or the same cookie with berry glaze on top of the tree. To simulate snow, dust with powdered sugar through a sieve.
