Ingredients
- Sichuan pepper - 0.3 oz
- 10% cream - 2 fl oz
- Ground Coffee - 1½ tablespoons
- 70% Dark Chocolate - 4.2 oz
- Sugar - 1 tablespoon
- Egg white - 3 pieces
- Whipped Cream - to taste
Step by Step guide
Step 1
Crush the pepper in a mortar. In a small saucepan over low heat, bring the cream, ground coffee, and pepper to a boil. Remove from heat and let steep covered for 30 minutes. Strain the cream through a fine sieve into a bowl.
Step 2
Break the chocolate into pieces and melt it in a large bowl. Pour in the cream and let it cool.
Step 3
Beat the egg whites with sugar using a mixer. Slowly and gently fold in the chocolate. Transfer the mousse to glasses and chill for at least 3 hours. Serve with whipped cream.
