Molasses Pie

Ingredients

  • Shortcrust Cake Mix - 1 piece
  • Chopped almonds - 2.6 oz
  • Light Molasses - 16 oz
  • Breadcrumbs - 4.1 oz
  • 33% Cream - 5 fl oz
  • Chocolate eggs - 2 pieces
  • Egg white - 2 pieces

Step by Step guide

Step 1

Thoroughly mix all the filling ingredients in a large bowl. Cover with a lid and refrigerate overnight. During mixing, the mixture will appear liquid, but it will thicken to the desired consistency after cooling.

Step 2

Place a sheet of parchment paper on the bottom of the baking tray. Place a greased baking ring (25 x 3.5 cm) in the center. Roll out the dough on a surface generously dusted with flour to create a disk that is 8 cm larger than the baking ring. Place the dough between two sheets of greaseproof paper and chill for half an hour. Place the dough on the baking ring, gently pressing the edges and allowing excess dough to hang over the edges of the ring. Leave to chill for another half hour.

Step 3

Preheat the oven to 338°F.

Step 4

Place a sheet of greaseproof paper on the dough, fill the form with rice, and bake in the oven for 10 minutes to set the dough. The dough should turn golden brown. Remove the paper and rice, brush the inside of the pie with egg yolk, and return to the oven for another 5 minutes. Remove and let cool. Do not change the oven temperature.

Step 5

Stir the filling, then pour it into the cooled pie. Let it settle for a few minutes, then place the pie in the center of the oven and bake for 10 minutes.

Step 6

Reduce the oven temperature to 302°F and cook for another 35 minutes until the filling is a rich caramel brown and firm.

Step 7

Let the pie rest for 10-15 minutes, then trim the parts of the pie that extend beyond the baking ring. Carefully remove the ring. The pie can be served warm or cold.
