Ingredients
- Chicken Egg - 9 pieces
- Sugar - 16.2 oz
- Wheat Flour - 16.4 oz
- Butter - 10.9 oz
- Fig - 2 lbs
- Citrus Zest Mix - to taste
Step by Step guide
Step 1
Beat the eggs and sugar until fluffy — the mixture should increase in volume several times.
Step 2
Add the flour and baking powder. Gently fold the mixture with a silicone or wooden spatula from the bottom up to prevent the batter from deflating. Finally, add the melted but slightly cooled butter. Mix everything until smooth. The batter should be liquid. Add a pinch of lemon zest.
Step 3
Slice the figs into wedges and arrange them in the bottom of a baking dish. Pour the batter over the figs. On top of the batter, place two more figs that have been cut in half.
Step 4
Bake for exactly 1 hour at 320°F. Check for doneness with a wooden skewer: if it comes out dry, the sponge cake is ready.
