Mont Blanc Dessert
Ingredients
- Wheat Flour - 8.8 oz
- Butter - 4.4 oz
- Whole egg - 2 pieces
- Chestnut flour - 3.5 oz
- Chestnut puree - 3.5 oz
- Whipped Cream - 3 fl oz
- Almond - 1.8 oz
- Chicken Egg - 1 piece
- Powdered Sugar - 1.8 oz
- Meringue - 6 pieces
- Salt - a pinch
Step by Step guide
Step 1
Mix the flour with sugar and salt, add the butter and mix thoroughly. Then add the egg yolks, continue kneading the dough for a few more minutes and place it in the refrigerator for 45 minutes.
Step 2
Preheat the oven to 338°F.
Step 3
Roll out the dough to a thickness of 3 mm. Cut out disks with a diameter of 10 cm and place them in baking rings, carefully trimming the edges.
Step 4
In a bowl, combine almond flour with powdered sugar, wheat flour, and softened butter. Add the egg and mix everything together. Place the resulting cream in a piping bag. Fill the prepared dough base three-quarters full.
Step 5
Bake for about 15–17 minutes until the dough is fully cooked. Let it cool.
Step 6
Add 1 teaspoon of orange jam on top of each tartlet, then add the meringue.
Step 7
In a bowl, mix the chestnut cream and puree. Place this mixture in a piping bag with a special fine nozzle. Generously spread this cream over the meringue to completely cover the tartlet.
Step 8
Dust the dessert with powdered sugar, chill it, and serve with a swirl of whipped cream.
