Moroccan Flatbreads (Khobz)
Ingredients
- Water - 7 fl oz
- Wheat Flour - 8.8 oz
- Semolina - 2.6 oz
- Star anise - 1 teaspoon
- Toasted Sesame - 1 teaspoon
- Salt - 1½ teaspoons
- Sugar - 1 tablespoon
- Olive Oil - to taste
- Dry yeast - 1 teaspoon
Step by Step guide
Step 1
For the dough, mix all ingredients except for the sesame seeds and olive oil.
Step 2
Roll the dough into a log, divide it into 4 parts, and shape each part into a flatbread.
Step 3
Place the flatbreads on a baking sheet, cover with a towel or foil, and let rise for 30 minutes, or until they double in size.
Step 4
Brush each flatbread with olive oil and sprinkle with sesame seeds, then prick the surface with a fork.
Step 5
Bake in a preheated oven at 482°F for 25–30 minutes.
