Description
Ghoriba (this is the most melodious way to refer to ghoribas) are traditional Moroccan baked goods shaped like small, flattened balls, usually very crumbly and sweet. Ghoribas can be made in various ways, with popular versions using semolina and shredded coconut, without any flour at all, or from a dough very similar to shortbread, often with sesame seeds. This version is made with wheat flour, ground almonds, oats, and orange zest. They are perfect with mint Moroccan tea.
Ingredients
- Oat flakes - 1.8 oz
- Almond - 8.8 oz
- Wheat Flour - 1.8 oz
- Powdered Sugar - 7.1 oz
- Chicken Egg - 3 pieces
- Baking Powder - 1 tablespoon
- Oranges - 1 piece
- Salt - a pinch
Step by Step guide
Step 1
Pour boiling water over the almonds and let them sit for 5–10 minutes.
Step 2
Remove the skins from the almonds and toast them in a dry skillet.
Step 3
Chop the nuts in a blender until they reach a flour-like consistency.
Step 4
Blend the oats in a blender.
Step 5
Combine almond flour and oat flour with wheat flour, add half of the powdered sugar, eggs, baking powder, a pinch of salt, and orange zest.
Step 6
Knead the dough and refrigerate it for 1 hour.
Step 7
Divide the dough into pieces the size of a walnut and roll them into balls.
Step 8
Roll the balls in powdered sugar.
Step 9
Place them on a baking sheet lined with parchment paper and flatten them slightly. Bake in an oven preheated to 338°F for about 20 minutes.
Step 10
Let the cookies cool down.
