Ingredients

  • Butter - to taste
  • Wheat Flour - 8.8 oz
  • Chicken Egg - 4 pieces
  • Sugar - 8.1 oz
  • Vegetable Oil - 8 fl oz
  • Cinnamon - 1 tablespoon
  • Carrot - 14.1 oz
  • Ground Almonds - 3.5 oz
  • Hazelnut - 3.5 oz
  • Baking Powder - 2 spoons
  • Semi-soft cream cheese - 10.6 oz
  • Lemon - 1 piece
  • Powdered Sugar - 3.5 oz
  • Vanilla extract - to taste
  • Pistachios - to taste

Step by Step guide

Step 1

Grease a baking pan with a diameter of about 28 cm with oil and dust it with a little flour. Preheat the oven to 356°F.

Step 2

In a bowl, thoroughly mix the eggs, sugar, butter, and cinnamon until smooth.

Step 3

Set aside 2 tablespoons of grated carrot for garnish. Add the remaining carrot, almonds, and hazelnuts to the bowl and mix well.

Step 4

In a separate bowl, combine the flour with the baking powder, then add it to the prepared mixture and stir.

Step 5

Pour the batter into the prepared pan and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Allow the finished cake to cool in the pan.

Step 6

In the meantime, combine the cream cheese and lemon juice in a small bowl, and whip until smooth, gradually adding the powdered sugar.

Step 7

At the end, add vanilla extract to taste and beat well.

Step 8

Remove the pie from the pan.

Step 9

Transfer the glaze to a piping bag (or a freezer bag with a corner cut off) and evenly spread it over the pie.

Step 10

Sprinkle with the remaining carrots and chopped pistachios. Serve immediately.
