Description
This recipe yields 12 medium-sized muffins. If you are using a gas oven that is not very new, I recommend increasing the temperature by 10 degrees for the last five minutes to brown the muffins. Lastly, for added health benefits, you can mix in a handful of oats.

- Salt - ½ teaspoon
- Sugar - ¾ cup
- Baking Powder - 2 teaspoons
- Butter - 2.8 oz
- Beans - 1 piece
- Carrot - 1 piece
- Pumpkin - 3.5 oz
- Egg white - 1 piece
- Wheat Flour - 1½ cups
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Mash the bananas into a puree, and grate the carrot and pumpkin.
Step 3
Mix all the ingredients until smooth and distribute them into muffin molds (using paper liners is very convenient). If desired, you can sprinkle the muffins with oats as shown in the photo.
Step 4
Bake the muffins in the oven for 25–30 minutes, depending on their size.
