Muffins with Sorrel and Pine Nuts

Ingredients

  • Cottage cheese - 10.6 oz
  • Chocolate eggs - 2 pieces
  • Grated Pecorino Pepato Cheese - 2½ tablespoons
  • Sorrel - 1 bunch
  • Wheat Flour - 3 tablespoons
  • Vegetable Oil - 2 tablespoons
  • Lemon - ½ piece
  • Pistachios - 2 tablespoons

Step by Step guide

Step 1

Pass the cottage cheese through a sieve.

Step 2

Blanch the sorrel in boiling water for 1 minute, drain, and chop finely.

Step 3

Preheat the oven to 374°F.

Step 4

Beat the eggs with vegetable oil, add the cheese and the juice of half a lemon. Whisk. Season with salt and pepper to taste. Sift the flour and gradually fold it into the egg-oil mixture, kneading until there are no lumps.

Step 5

Add the cottage cheese. Knead. Add the sorrel and nuts. Knead.

Step 6

Grease the muffin molds with oil, fill them 2/3 full, and bake for 20–25 minutes until golden brown.
