Description
A wonderful pie that we have made many times in our kitchen. The mung beans are cooked in broth with sautéed onions and carrots, then mixed with grated Emmental cheese and baked in puff pastry. A hearty protein dish, just be careful not to overbake it in the oven.
Ingredients
- Mung Beans - 8.8 oz
- Carrot - 1 piece
- Garlic - 2 cloves
- Spanish onions - 1 piece
- Olive Oil - 1 fl oz
- Puff Pastry - 7.1 oz
- Salt - to taste
- Emmental cheese - 3.5 oz
- Ground Black Pepper - to taste
- Chicken Egg - 1 piece
- Wheat Flour - a pinch
Step by Step guide
Step 1
In a deep skillet, sauté finely chopped carrots and onions in vegetable oil. Once the vegetables become tender, add garlic and cook until fragrant.
Step 2
Add the mung beans, stir, and pour in water. About one liter should be enough. Cook over medium heat for forty minutes. Most likely, the water will evaporate completely during this time; if not, drain any excess water and mix the cooked beans with grated cheese. Let cool.
Step 3
Roll out the puff pastry, dusting the rolling pin with flour, into a large thin rectangle slightly larger than a standard baking tray. Spread peas over the pastry and fold the edges.
Step 4
Brush the dough with beaten egg and place the pie in the oven at 356°F for twenty minutes. Serve cold.
