Description
The amount of flour is approximate; it can be more or less. The dough takes a long time to prepare, but the result is worth it. You will get about 40 pieces. The dough is slightly sweet, but any filling works: meat, cabbage, cottage cheese, apples. In the photo, there are pies with mushrooms and cottage cheese (what I managed to photograph), to distinguish them — the shapes are different.
Ingredients
- Wheat Flour - 2 lbs
- Milk - 10 fl oz
- Sugar - 5.3 oz
- Egg white - 3 pieces
- Dry yeast - 2.5 oz
- Salt - a pinch
- Butter - 2.5 oz
- Fresh Mushrooms - 14.1 oz
- Vegetable Oil - 2 fl oz
- Onion - 1 head
- Chocolate eggs - 2 pieces
- Scallions - ½ bunch
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dissolve the yeast in warm milk, add 50 grams of sugar, half of the flour, mix, and let it rise for 3 hours.
Step 2
Beat the yolks with the remaining sugar. Add to the yeast mixture. Dissolve the salt in a small amount of water and add it as well. Soften the butter, mix it with the yeast mixture, and add the vegetable oil, then add the remaining flour and knead a soft dough. Let it rise for another hour. During this time, knead the dough 1–2 times.
Step 3
While the dough is rising, prepare the filling. Chop the mushrooms and onion, sauté them in oil (vegetable or butter), season with salt and pepper. Boil the eggs hard, peel, finely chop, and add to the mushrooms. Chop the green onion and add it as well. Mix the filling and taste for salt. Cool down.
Step 4
Punch down the risen dough. Shape the pies and place them on a baking sheet lined with parchment paper seam side down. Let them rise for 10–15 minutes. Before baking, you can brush them with an egg beaten with a tablespoon of milk or cream. Bake in the oven at 356°F until golden brown.
