Mushroom Profiteroles
Ingredients
- Water - 4 fl oz
- Milk - 4 fl oz
- Butter - 3.5 oz
- Wheat Flour - 5.3 oz
- Farm fresh eggs - 3 pieces
- Sugar - ½ teaspoon
- Pickled Chanterelles - 14.1 oz
- Onion - 1 piece
- Cheese Spread - 7.1 oz
- Sour Cream - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Combine water and milk, add butter, and place over heat. Bring to a boil and simmer until the butter is fully melted and combined with the other ingredients, about 2 minutes.
Step 2
Remove the mixture from heat and gradually add flour, stirring well.
Step 3
Incorporate the eggs one at a time into the dough, continuing to mix thoroughly.
Step 4
Transfer the dough to a piping bag, pipe onto a baking sheet, and bake for 10 minutes at 428°F, then at 374°F until golden brown. Allow to cool.
Step 5
For the filling, finely chop the onion and sauté in oil until translucent.
Step 6
Add the finely chopped mushrooms and sour cream, and simmer until the liquid evaporates completely or until cooked through.
Step 7
Stir in grated cheese, mix well, season with salt and pepper. Allow to cool to room temperature.
Step 8
Fill the profiteroles using a teaspoon, making discreet cuts at the base.
