Description
Traditional flaky pastry for quiche, requiring a bit of patience. The pastry and mushrooms are prepared separately and combined just before serving.
Ingredients
- Wheat Flour - 7.4 oz
- Butter - 4.6 oz
- Chicken Egg - 1 piece
- Fresh Mushrooms - 17.6 oz
- Vegetable Oil - 1 tablespoon
- Meyer Lemon Juice - 2 spoons
- Safflower Oil - 1 tablespoon
- Milk - 10 fl oz
- Whole egg - 1 piece
- Salt - to taste
Step by Step guide
Step 1
The dough should be made two hours before you start making the pie. Sift the flour with salt into a bowl, add the butter cut into small pieces, and gently mix everything with your hands. Add the egg yolk and knead the dough until it resembles bread crumbs. Then gradually pour in 30 ml of water, constantly stirring the dough until it becomes smooth. Dust the table with flour, knead the dough well, shape it into a ball, place it on a plate, cover it with a towel, and let it rest in a cool place for 2 hours.
Step 2
Grease a tart pan with butter — it should be about 10 inches in diameter and at least 1.5 inches deep. Roll out the dough into a circle, place it in the bottom of the pan, and press it with your fingers so that it covers the entire bottom and sides of the pan. You can trim any excess dough from the edges with a knife. Prick the dough at the bottom of the pan in several places with a fork.
Step 3
Beat the remaining egg white and use a brush to glaze the dough with it. Place it in a preheated oven at 356°F and bake for 25 minutes.
Step 4
Meanwhile, thinly slice the mushrooms. In a pot, heat 15 grams of butter, add the mushrooms, season with salt, and drizzle with lemon juice. Cover the pot with a lid and cook on low heat for no more than 10 minutes.
Step 5
In another pot, heat the remaining butter with the olive oil, then stir in the flour and gradually add the milk while constantly stirring. Season with salt and cook over medium heat, stirring, for 5 minutes. Beat the egg yolk and add it to the sauce, continuing to whisk.
Step 6
Once the dough and mushrooms are ready, add the sauce to the bowl with the mushrooms and mix well. Transfer the quiche to a serving dish and fill it with the mushrooms and sauce. Serve immediately.
