Mushroom Tart with Caramelized Onions and Gorgonzola

Ingredients

  • Olive Oil - 2 tablespoons
  • Onion - 1 head
  • Butter - 1 tablespoon
  • Fresh Mushrooms - 17.6 oz
  • Garlic - 1 clove
  • Salt - to taste
  • Chopped Sage Leaves - ½ teaspoon
  • Ground Black Pepper - to taste
  • Dry White Wine - ¼ cup
  • Goat cheese - ½ cup
  • Puff Pastry - 17.6 oz
  • Chopped Sage Leaves - 4 tablespoons

Step by Step guide

Step 1

Heat 1 tablespoon of olive oil in a pan, add the sliced onion and cook over low heat for 20 minutes until the onion begins to caramelize.

Step 2

In another pan, melt the butter, add the thinly sliced mushrooms and cook over low heat until the mushrooms start to caramelize, about 20 minutes. Add the garlic and chopped thyme and cook for another minute. Season with salt and pepper, then pour in the wine and cook until the wine evaporates.

Step 3

Preheat the oven to 392°F.

Step 4

Roll out the dough into a rectangle measuring 40x25 cm. Transfer to a baking sheet. Using a sharp knife, make cuts around the perimeter of the rectangle about 2-3 cm from the edge, without cutting all the way through.

Step 5

Spread the filling on the dough, keeping the cut edges clean, then layer the caramelized onions and sprinkle with crumbled cheese. Brush the edges of the dough with olive oil and bake for 15-20 minutes until golden and cooked through.

Step 6

Sprinkle with parsley and serve.
