Ingredients
- Cream 22% - 17 fl oz
- Puff Pastry - 17.6 oz
- Sugar - 1 glass
- Butter - 7.1 oz
- Whole egg - 3 pieces
- Vanillin - 0.5 oz
- Wheat Flour - 3 spoons
Step by Step guide
Step 1
First, we will prepare the custard. In a saucepan, combine the egg yolks, vanilla, 3 tablespoons of sugar, 50 ml of cream, and all the flour. Whisk everything together until well mixed.
Step 2
In another pot, bring the remaining cream and sugar to a boil, then gradually pour it into the egg yolk mixture in a thin stream. While adding the hot cream, whisk the mixture with a mixer.
Step 3
Place the pot over heat and bring it to a boil, stirring constantly with a whisk, but do not let it boil, as this will cause the cream to curdle and there will be nothing we can do to fix it. As it heats, the mixture will thicken. Once ready, let the cream cool slightly.
Step 4
While the cream is cooling, let's work on the cake layers. Divide the dough into several portions and then roll them out into layers of equal size. Use a fork to poke a few holes in each layer so they don't rise too much in the oven. This way, we end up with several layers (I had a total of four).
Step 5
While the layers are cooling, gradually add the softened butter (removed from the refrigerator in advance) to the custard, continuing to whisk everything together with a whisk. The cream is now ready. You can set it aside or place it in the refrigerator to cool completely and thicken further. Alternatively, you can use it right away, as I did.
Step 6
Now take the cake layers, generously spread cream on each one, and carefully stack them on top of each other. Set one layer aside for the cake crumbs.
Step 7
Crumble the remaining layer of cake that has not been frosted and sprinkle it over the top and sides of the cake.
Step 8
Now you can place it in the refrigerator for a few hours to let it soak in. Or you can dive right into tea time!
