Nectarine Tarte Tatin
Ingredients
- Nectarines - 2 pieces
- Puff Pastry - ½ piece
- Sugar - 2.6 oz
- Butter - 0.4 oz

Step 1
Preheat the oven to 356°F.
Step 2
For the caramel, heat a skillet over medium heat, add the sugar, and spread it evenly across the surface of the skillet with a spoon. Cook without stirring until the bottom layer of sugar begins to melt. Once this happens, mix the top layer of sugar with the melted caramel using a spoon. Wait for all the sugar to dissolve, remove from heat, and quickly stir in the warm butter. Pour the caramel onto a baking sheet lined with parchment paper. Allow the caramel to spread across the paper by gently lifting the edges. Let the caramel set for 10 minutes, then break it into pieces with a knife. Place the resulting shards at the bottom of a greased 15x15 cm (6x6 inch) ovenproof dish. The caramel should completely cover the bottom of the dish.
Step 3
Peel the nectarines and remove the pits. Cut them into large wedges. Arrange the wedges on top of the caramel, cut side down.
Step 4
Thaw the sheet of puff pastry, cut it in half, and place one half in the freezer until needed. Roll out the other half on a floured surface into a square with sides of 19 cm (7.5 inches). Cover the nectarines with the pastry, tucking the edges inside the dish. Poke the pastry all over with a fork to allow steam to escape.

Bake in the oven for 30 minutes, then remove from the oven and let cool for 10 minutes. Invert the tart onto a plate and serve with a scoop of your favorite ice cream.
