Description

Ingredients

  • Almond - 1.8 oz
  • Oranges - 1 piece
  • Wheat Flour - 10.6 oz
  • Whole egg - 3 pieces
  • Egg white - 3 pieces
  • Sugar - 8.8 oz
  • Cognac - 1 fl oz
  • Baking Powder - 0.2 oz
  • Butter - 3.5 oz
  • Powdered Sugar - to taste
  • Red Currant - to taste

Step by Step guide

Step 1

Before you start mixing the dough, you need to prepare the ingredients.

Step 2

Grate the zest of half an orange and squeeze out the juice.

Step 3

Pour boiling water over the almonds, let them sit for 2 minutes, then drain the water and remove the outer skin. After that, dry them in a dry skillet and grind them into a very fine crumb using a grinder.

Step 4

Sift the flour into a separate bowl and mix it with a teaspoon of baking powder.

Step 5

In another bowl, cream the butter with the granulated sugar. Continue to beat with a mixer for 10 minutes. Then add the egg yolks and continue to beat for another 10 minutes.

Step 6

Add orange juice, 2 tablespoons of brandy, and zest, and continue to whisk.

Step 7

Add the ground almonds to the mixture, then gently fold in the flour with the baking powder.

Step 8

The last ingredient is the egg whites. They need to be whipped well until a thick, stable white foam forms, which may take about 5 minutes. Then, gently fold them into the batter, making sure to combine all the components without letting the egg whites deflate. It is usually recommended to stir with a spoon or a spatula in one direction.

Step 9

Place the dough in a greased baking dish and put it in a preheated oven at 392°F. Bake the pie for about 30 minutes, then check its readiness with a toothpick — if the toothpick inserted into the pie comes out clean, the pie is ready.

Step 10

Remove from the oven and let it cool. Before the celebration, it's a good idea to wrap it in foil and place it in the refrigerator; this will enhance its aroma even further.

Step 11

Dust the top with powdered sugar; you can use a stencil for this, which is easy to cut out of regular paper.

Step 12

To help the topping stick better, brush the surface with water, syrup, or brandy. By the way, if the surface of the cake is uneven (as in my case), you can flip it upside down.
